 MILK BARFI | DOODH KI BURFI 

Milk Barfi or Doodh ki Burfi is a super delicious, easy to make, melt in mouth Indian sweet recipe prepared using 3 ingredients.One of the best sweets dessert. A perfect sweet to make on Diwali, Holi, Navratri or any festival ond any special occasion!

Ingredients

 6 servings
  1. MILK 1 Liture
  2. 120 gram Sugar
  3. 1/4 tbsp Cardamom powder
  4. Green food color as required
  5. Red food color as required

Steps

  1. Pour the milk in a large thick bottomed pan and place the pan on the gas top.

  2. Bring milk to gentle boil first on a low to medium flame.
    • Then lower the flame and simmer the milk. Stir at intervals whilst the milk is simmering.

  3. The milk will froth many times, while its being simmered. So when you see this happening, with a spatula stir the milk.

  4. Scrape the milk solids from the sides and add to the milk.
    • The milk will continue to reduce and thicken as its being simmered on a low flame

  5. A stage will reach when the reduced milk will resemble rabri (an indian sweet).
    • Continue to simmer and stir.

  6. Towards the end when the milk has reduced much, you will see bubbles bursting in the reduced milk. At this point continuously stir. If you don't then the reduced milk will get browned or burnt. The bubbles are due to moisture in the milk.

  7. When you see no bubbles in the reduced milk, its time to switch off the flame. With a spatula, scrape the milk solids from the sides and add these to the bowl. Cover the bowl and let the khoya cool at room temperature.

  8. Divided khoya in two part and mix color in one part green and add in one part red colour and mix well.

  9. Grease a cake pan and keep aside it.

  10. Transfer the green khoya mixture to the pan and spread it with the spatula and make a layer and again add second layer of red color and spread it with the spatula and make a layer.

  11. Allow to cool completely and cut to desired shape or triangle shape.

  12. Milk burfi is ready to serve, you can enjoy it.
