Dhaba style Egg Curry Recipe I Egg curry Recipe I Anda masala curry Recipe 


EGG CURRY IS A DELICIOUSLY,HEALTHY  RICH ONION TOMATO GRAVY, TASTES EXACTLY LIKE THE ONES YOU GET IN DHABAS. THESE ARE PERFECT WITH SOME RICE OR PARATHA, NAN,ROTI AND FRESH SALAD ON THE SIDE










This dhaba style egg curry is very flavorful, hot and absolutely fingerlicking yummy. In this recipe, the boiled eggs are cooked…in a thick onion tomato based gravy infused with aromatic spices. It tastes excellent Yummy with tandoori rotis, parathas or fried rice. 

Ingredients


4 Eggs

For roasting egg

4 tablespoon Oil

For gravy

4 tablespoon Oil


2 medium Onion (Finely Chopped about 1 bowl )

2 tablespoon Ginger Garlic Paste

1 Finely chopped Tomatoes

1 tablespoon Coriander Powder

1 teaspoon Cumin Powder

1 teaspoon Red Chilli Powder

1teaspoon Kashmiri Red Chilli(Substitute by Paprika)

1/4 teaspoon Turmeric powder

1 teaspoon Garma Masala

Water as required 

salt to taste

1/4 tbsp black paper 

Granish with Green consider 

Instructions


In a pan cover eggs with cold water. Let it come to a boil.Cook eggs 6-7 minutes. Transfer eggs to cold water. When it is comfortable to handle, peel.

Heat oil in a pan. When the oil is hot, add eggs to the pan. Fry in medium-hot until you see  brown blisters. Remove and keep aside.

To the same pan add 1/2 bowl of oil. When hot add  2 bay leaf and saute for 30 seconds until smokey.

Add chopped onion, saute for 3-4 minutes. The onion will soften and start to brown.

Add ginger-garlic paste.Saute for a minute, stirring in between.

Add chopped tomatoes. Cook until tomato is soft and mushy.

When there is no raw smell of ginger garlic, lower heat. Add gram masala .cumin powder, coriander powder, turmeric, red chilli powder, Kashmiri red chilli powder. Saute for 30 seconds, until aromatic. Sprinkle little water to prevent it from burning.

When you see oil separating from the mixture, it is time to add water and boil.

Season with salt, add garam masala and fried eggs to the pan.

Mix everything and cook for another 2-3 minutes.

Garnish with fresh coriander leaves.

Egg curry is ready to eat. Enjoy Egg curry.
