Amla pickle recipe | amla achar or amla ka achar | gooseberry pickle

INGREDIENTS

  •  2 tsp mustard seeds / rai powder
  •  1 tsp methi / fenugreek seeds powder
  • 1 tsp carom seeds / Ajwain powder
  • 2 inch Ginger peace
  • 15 nos Garlic buds
  •  500 gram amla / gooseberry / nellikai
  •  240 gram mustard oil
  •   6 peace green chilli
  •   2 pinch of hing / asafoetida
  • 1 tsp kashmiri red chilli powder / lal mirch powder
  • 2 tsp turmeric / haldi
  • salt to taste, add as required

INSTRUCTIONS

1.            firstly, wash and boil the amlas (gooseberry / nellikayi) for 10 minutes.

  1. cook till the amlas open up by itself. allow it to cool completely.
  2. further, open the amla by separating the segments and removing the seeds from centre.
  3. spread it on the plate and allow to cool completely.
  4. meanwhile, prepare the pickle masala add in the mixer Jar green chilli, ginger, garlic buds, water 2 tsp and grind make a paste.
  5. Heat the oil in the  pan and add the ground spices and roast.
  6. Further add 1 tsp kashmiri red chilli powder and 2pinch of hing, 1 tsp turmeric. 2 tsp mustard seeds / rai. 1 tsp carom seeds / Ajwain,salt to taste,1 tsp methi powder and mix well and roast for 2 minute.
  7. After roast add amla in spices and mix well
  8. saute for a minute or till the amlas absorb flavour.
  9. Turn off the induction and leave the amla cool down
