Amla
pickle recipe | amla achar or amla ka achar | gooseberry pickle
Amla pickles are the kind of
accompaniments that turn everyday meals like rice-dal or dahi chawal into a
spiced up delicious dinner! Amla as an ingredient comes loaded with plenty of
nutritional content - Vitamin C rich, heart friendly, great for skin and hair –
you name it! This amla pickle recipe is really simple, it is delicious and you
can store it for months.

INGREDIENTS
- 2 tsp mustard seeds /
rai powder
- 1 tsp methi / fenugreek
seeds powder
- 1 tsp carom
seeds / Ajwain powder
- 2
inch Ginger peace
- 15
nos Garlic buds
- 500
gram amla / gooseberry / nellikai
- 240 gram mustard oil

6 peace green chilli
- 2 pinch of hing / asafoetida
- 1 tsp
kashmiri red chilli powder / lal mirch powder
- 2 tsp turmeric
/ haldi
- salt
to taste, add as required
INSTRUCTIONS
1.
firstly, wash and boil the amlas (gooseberry / nellikayi) for 10
minutes.
- cook till the
amlas open up by itself. allow it to cool completely.
- further, open
the amla by separating the segments and removing the seeds from centre.
- spread it on the
plate and allow to cool completely.
- meanwhile,
prepare the pickle masala add in the mixer Jar green chilli, ginger,
garlic buds, water 2 tsp and grind make a paste.
- Heat the oil in
the pan and add the ground spices
and roast.
- Further add 1
tsp kashmiri red chilli powder and 2pinch of hing, 1 tsp turmeric.
2 tsp mustard seeds / rai. 1 tsp carom seeds /
Ajwain,salt to taste,1 tsp methi powder and mix well and roast for 2
minute.
- After roast add
amla in spices and mix well
- saute for a
minute or till the amlas absorb flavour.
- Turn off the
induction and leave the amla cool down
