Kaddu ka halwa / Pumpkin Halwa is an easy and exotic dessert made with the goodness of pumpkin, khoya and flavoured with cardamom. The blend of cashews, almond, and raisins really adds to the uniqueness of the recipe.

Kaddu Ka Halwa Recipe or Pumpkin Halwa is a unique vegetable-based dessert like Gajar ka Halwa which turns stupendously toothsome.

Pumpkin is popularly known as Kaddu in India. And trust me, we Indians use this vegetable in diverse ways. Though, we use it more while preparing Sambhar or sabzi, do you know that we can create so many different dishes using pumpkin?







Considering that pumpkin combats cancer, improves the health of eyes, enhances immunity and fertility, it sounds right to eat pumpkin as often as possible. Now some of you, may or may not like the taste of pumpkin when cooked directly, but by making Kaddu Ka Halwa, you can easily solve that dilemma.

Ingredients

 4 servings
  1. 2 tbsp Ghee
  2. 250 g Kaddu/Pumpkin (Grated)
  3. 5 tbsp Sugar
  4. 200 g Khoya (Crumbled)
  5. 1/4 tsp Cardamom Powder
  6. 5-6 Almonds (Chopped)
  7. 3-4 Cashew Nuts (Chopped)
  8. 4-5 Pistachio (Chopped)
  9. 1 pinch Orange Food color
  10. 1 tbsp Kewda water

Steps

  1. 1. Heat ghee in a heavy bottom pan.

  2. 2. Once the ghee is hot, fry the almonds, cashew nuts and pistachios until they are slightly browned.

  3. 3. Remove and keep aside.

  4. 4. In the same ghee, add the grated kaddu.

  5. 5. Cook on medium flame for 10-12 minutes, stirring at regular intervals.

  6. 6. Add khoya and cook for 10-12 minutes

  7. 7. Add sugar and cook for another 10-12 minutes.

  8. 8. Add orange food colour in kwda water and cook for few minutes.

  9. 9. Keep stirring at regular intervals through out the process. cook till the halwa thikens and thick.

  10. 10. Finally add the cardamom powder and fried nuts.

  11. 11. Serve hot.
