Dahi wali lauki _Curd vegetable is a unique vegetable that we make by mixing the gourd with spices and adding curd in it by layering. It is a very good value of spices fragrance vegetable,The curd gourd vegetable is delighted in tastes that it is easy to eat without eating it.
Ingredients :
Bottle gourd – 250 grams
Plain yogurt – 500 gm
Salt – to taste
Cumin seeds powder roasted – 1/2 teaspoon
Coriander powder – 1 teaspoon
Red chili powder – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Gram masala 1/2 tbsp
Ginger garlic paste 1 tbsp
Onion chopped 1 peace
Coriander leaves – 1 tablespoon, chopped
Tadka spices-
Whole red chilli 6 peace
Curry leaf as required
Cumin seed 1/2 tbsp
Refine oil – 1/2 bowl for cooking the spices + more for shallow-frying
How To Make Dahi Wali Lauki:
1. Prepare the ingredients
Peel the bottle gourd, trim the ends. Cut into thin wedges round shape.
How to make bottle gourd wedges: Slice the bottle gourd into round thin cylinders. Halve each cylinder round shape wheel, then cut thin slice each half as if along the wheel.
Keep the yogurt unrefrigerated for 1-2 hours before you plan to make dahi wali lauki [cold yogurt tends to curdle when heated].
Shallow-fry the bottle gourd
Heat a wide non-stick pan with a thin coating of 3 tbsp oil. When hot, place the bottle gourd wedges in a single layer. [If the pan does not accommodate all the bottle gourd, cook in batches.]
Shallow-fry on high heat till the surface of the bottle gourd facing the heat has browned a bit.
Flip the wedges over and let the other side brown as well.
When cooked on both sides, remove the bottle gourd wedges from the pan and set aside.
Heat the 2 tbsp oil in pan and add chopped onion and shaallow fry
Add ginger garlic paste and roast for few minutes.
Add garam masala cumin seed powder, coriander,salt to taste, turmeric, red chilli powder. and kasuri methi and some water and stir a little.
Add the fry gourd and mix it well in the spices.
Add a cup of water, mix it well and keep it covered for 10 minutes to cook.
After cooking the gourd well, keep it to cool for 10 minutes.
The gourd vegetable has cooled down, now let's start layering the vegetable and curd twice in the bowl and add coriander leaves from above.
Tadaka preparation-
Heat the pan, add two teaspoons of oil and make red tempering by adding red mirch cumin seeds.
Put the tempering in the curd gourd vegetable.
Curd gourd vegetable is ready, now enjoy it chapati rice or non or paratha.
